Tomorrow is Eat Your Veggies Day! This recipe is a sure-fire way to guarantee you will be celebrating this “holiday.”

I don’t know what it is about this particular recipe. The first time I had it was at my baby shower for Sully. OMG. So good.

Spoiler Alert: It wasn’t just delicious because I was pregnant.

Veggie Dill Dip

This Veggie Dill Dip recipe is from my mom. I’ve never made a double batch because a single batch doesn’t last one full day and I’m sure a double wouldn’t last any longer. I make it and when I put it out on the island… veggies and chips start flying and before you know it, it’s gone. (Yes, I know it’s technically a veggie dip, but we have chipaholics in our house who are equal opportunity dippers so it just kinda morphed into a chip dip too.)

Ingredients Needed:
  • 1 cup sour cream
  • 1 cup mayo
  • 1 tablespoon dried dill weed
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried parsley
  • 1/4 teaspoon seasoned salt

Easy, right? You probably already have it memorized.

Veggie Dill Dip

If you are on my mailing list, you may already know that I’m almost done with Week 1 of the 4-Week Wellness JumpStart so I have already been eating more veggies. Making this recipe again was a great test for me because yeah, I’m eating veggies but that doesn’t mean I need to consume a whole 1/2 cup of dip to go along with them. A good exercise in “all things in moderation.”

Also, you can substitute greek yogurt for either the sour cream or the mayonnaise. I would probably opt to replace the mayo since it is the most fattening of the two; however, I have not tried substituting and chose to go with the full fat and just eat less of it.

Veggie Dill Dip

Ingredients

  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1 tablespoon dried dill weed
  • 1 tablespoon dried minced onion
  • 1 tablespoon dried parsley
  • 1/4 teaspoon seasoned salt

Instructions

  1. Mix all ingredients well and chill in refrigerator for at least 4 hours before serving with your favorite veggies and/or chips!
