If you like sweet and salty and you like cheese, this appetizer is a must-try. I found this recipe at The Noble Pig. I have plans to try a number of baked brie recipes, most of them on the savory spectrum. This one is sweet, but I chose to do this one first because I just happened to have all the ingredients already. Except for the brie, of course. I don’t know many people who have a wheel of brie in their fridge regularly. I found a 16.9 oz wheel at Sam’s.

First, I unwrapped the cheese and gently sliced through the top layer. You will need a very sharp knife. If you have trouble making it all the way through the cheese, don’t worry. As long as you get close enough, the top layer will peel off after cooking.

The original recipe called for a 350° oven but I had another dish in for 325° so I put them in together. The brie will need to bake for at least 20 minutes. I found that 20 minutes was just about right for the size wheel I got but could’ve been in for an additional 5 minutes without burning.

While the brie is in the oven, heat a cup of Kahlua and a cup of packed brown sugar to boiling. Turn the heat down to a simmer and stir regularly. Simmer for at least 20 minutes and then add a cup of pecans. Heat and stir for an additional 5 minutes. Remove from heat and let stand for about 5 minutes to thicken.

Once you remove the brie from the oven, peel back the top layer loosened earlier and toss. Top with the concoction from the saucepan. Serve with your favorite cracker. (I used plain Triscuits.)

Let me know if you try this recipe and what you thought. I would definitely make this one again, but probably when I had a lot more people around to eat it! A party food for sure.

Kahlua and Brown Sugar Baked Brie with Pecans

Course Appetizer


  • 1 brie wheel approx. 18 oz.
  • 1 cup Kahlua coffee liqueur
  • 1 cup brown sugar
  • 1 cup pecans


  1. Preheat oven to 350ºF.

  2. Unwrap the brie and slice through the top layer. Leave the layer on during baking, about 25 minutes.

  3. While the brie is in the oven, heat the Kahlua and brown sugar in a saucepan. Bring to a boil, then turn the heat down to a simmer for 20 minutes, stirring regularly.

  4. Add the pecans and continue to simmer for an additional 5 minutes.

  5. Remove the brie from the oven, peel back the top layer and toss. Pour the saucepan contents over the brie. Serve with your favorite crackers.
