Welcome to my very first cocktail post! It’s spring! How about celebrating sunshine with this Grapefruit Sunshine Cocktail?

The recipe development for this cocktail was my favorite so far! Little bit of this, little bit of that… *sip* Nope, not quite right. A lot of this, a splash of that… *sip* Hmmmm… still missing something.

And on and on it went until I got the perfect proportions! (It’s a good thing I wrote it down!)

Last summer Rudy and I went on a Caribbean cruise. It was amazing! It was my first cruise. Day 5 was my favorite because that was the day we got married in Grand Cayman. (More on that trip in future posts.) Since we couldn’t take all of our friends and family with us, we decided to have an informal reception at our house after we got back. It was then that I was introduced to Deep Eddy vodka via my sister-in-law Amber.

Uhhhh… yum! I was instantly converted from being a rum girl. (That’s not to say I won’t drink rum anymore!) She had the lemon flavor, which I do like, but the grapefruit version used in this cocktail is my favorite. They also have a cranberry flavor that I like a lot, but it’s a bit sweeter.

I love that this cocktail has fresh-squeezed grapefruit in it. Makes me feel like I’m drinking something healthy while drinking something not-so-healthy, ya know? This grapefruit sunshine cocktail is great for your metabolism! (I’m totally making that up and the opposite is probably true, but it sounded good, right?) I guess you could eat the leftover grapefruit for a detox breakfast the next day… that would work.

Come back and let me know how you like this one! If you can’t find Deep Eddy brand, I know there are others but I have not tried them.

  • mint for garnish
  • grapefruit slices for garnish

  1. In a tall glass, add the ice, vodka, lime liqueur, and grapefruit juice. Stir well.

  2. Stir in the soda. You may want to add more or less, depending on how strong you would like the cocktail.
