Happy Chocolate Chip Day! I was happy to see this on the National Day Calendar because I knew it was time to share my go-to chocolate chip cookie recipe. This chocolate chip cookie recipe is from my mom. It is one that has been floating around our hometown of Decatur, Michigan so some of my followers/subscribers may already know this one. If you do, please comment below! The only thing I changed is I make sure to use the butter-flavored shortening. I think it just gives them something special. I’ve made them with the plain shortening too and the texture is completely the same but the taste is just missing something. Use the butter-flavored shortening!
I’m writing this as we’re winding down from a wonderful Mother’s Day. I woke up at 7am to Sully demanding milk and a cereal bar. When I went to get it for him, he had a meltdown that I didn’t wait for him while walking to the kitchen with one eye barely open. Then after I took him potty, changed his Pull-Up, and got him all snuggly in between us to watch Bubble Guppies he let me juuuuuuuuust fall asleep again before kicking me square in the face (on accident, of course). Happy Mother’s Day to me! Haha.
Rudy got up with him and let me sleep until after 10am which never happens so thank you Honey! Rudy made me a copycat Bob Evans Sunshine Skillet and I inhaled it. It was so good. Perhaps something I should make for the blog later?
When Sully went down for a nap I worked on editing my video below, which we shot on Saturday. Sully had to watch it approximately 250 times because he has a cameo appearance in it.
For the rest of the day I was just generally lazy until it was time to eat a steak dinner made by my awesome husband. My only regret is there isn’t any left over for my lunch tomorrow.
Sully and I FaceTimed my mom while Rudy was grilling. Sully tried to hug the iPad when we were saying goodbye. Awwwww.
I’m sitting here typing with my hair still wet due to a most relaxing Mother’s Day bath. I finally got to use my bath bomb from Lush which I wrote about in my post here. (It’s a good story in case you missed it.) I’m so silky smooth and clean! And well fed. Time for bed!
Happy Mother’s Day to all the moms out there! Also, my heart goes out to all of those who dread Mother’s Day for one reason or another. Whether you are missing your mom, never knew your mom, don’t speak to your mom, want to but can’t be a mom… just know you are loved and I think about all of you out there.
Chocolate Chip Cookies
- 1 cup butter-flavored shortening I like Crisco
- 1 cup sugar
- 1/2 cup brown sugar
- 2 eggs I like Eggland's Best
- 1 teaspoon vanilla
- 2 1/2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cup chocolate chips
Preheat the oven to 350 F.
Combine the shortening, sugar, and brown sugar and cream together.
Add the eggs and vanilla and mix.
In a separate bowl, combine and sift the flour, salt, and baking soda.
Slowly add the dry ingredients to the wet ingredients and mix well.
Fold in the chocolate chips.
Use a scoop to arrange the cookies on a cookie sheet.
Bake the cookies for 12-13 minutes or until golden brown.
Allow to cool on cookie sheet briefly before serving.
