I almost burnt out the motor in my food processor this weekend from using it so much. Besides this avocado pistachio pesto, I also made kalamata hummus, a pork marinade, and dutch babies using it. I think I’ve already gotten my husband’s money’s worth and I’ve only had it since Christmas.

Another thing we’ve gotten our money’s worth out of are the oodles and oodles of puzzles my son has. He does them constantly. He has this Dory one he loves that’s 24 pieces. He has a couple 12-piece ones that he has had for about 3 weeks and I think he’s getting bored of them. Then I ordered him this one and this one. They are harder for him because they’re 48 pieces and we have to help him a lot but he’s learning the different sections he has to put together. I think another 2 weeks and he’ll be moving on. You know, I said WE have to help him a lot, but in actuality, I’m the one he’s calling every five seconds.



Then a super-pathetic sounding, “Momma helllllllp.”

Then if I don’t immediately respond…




Or if I start the food processor I get a, “Not. Nice. Momma!”

I swear I’m not intentionally ignoring my kid.

I think what I love most about this pesto recipe is the addition of the avocado. It just makes it so creamy and holds it together nicely like a dip. I also like to use pistachios instead of pine nuts because I just love pistachios. I also learned something new about my husband. He loves pistachios too! I went to sit on the couch and shell them and he got all bright-eyed and I had to break it to him that I wasn’t bringing us a snack. (Don’t worry, I gave him the leftovers after I measured out what I needed.)

Avocado Pistachio Pesto


  • 1 cup basil leaves packed
  • 2 cups baby spinach packed
  • 1/2 cup pistachios
  • 1 avocado peeled and pitted
  • 1 lemon juiced
  • 1/2 cup avocado oil I like Chosen Foods brand


  1. Add all ingredients except oil to a food processor and blend well. 

  2. Drizzle in the avocado oil with the food processor running. More can be added to get it to the desired consistency.

  3. Refrigerate.
